My Swiss mother-in-law makes the best jams on the planet. Her creations have travelled far and wide – even all the way to New York! So, before moving back to Ireland, I booked myself in for a few lessons! Whenever she’s over here for a visit, though, she likes to elbow me out of the kitchen and wield the wooden spoon herself! The cordials, meanwhile, are ones I’ve been making for years. In fact, the homemade lemonade harks back to my youth, when I used to make it for our restaurant on Inishbofin. It was one of the most popular things on the menu. Basically, anything in a bottle or jar can be found here, so cordials, jams, jellies, chutneys and so on.

drinks
- Elderflower cordial – perfect diluted with water, added to prosecco, or drizzled over ice cream
- Homemade lemonade – dilute with water and add ice for the ultimate refreshing drink
- Ginger and lemon cordial – great hot or cold
- Spice mix for mulled apple juice – add to apple juice and warm in a saucepan for delicious ‘apple punch’
